Trained in the classic French tradition, FIG Executive Chef Jason Prendergast sources every dish on his seasonally-inspired menu from local farmers and purveyors: “simply prepared items with a focus on flavor and quality,” as L.A. Confidential says; in other words, bright, lusciously colorful and exquisitely presented place-based cuisine. Chef meets specialty foragers and visits local farmers’ markets several times a week, and when you dine here, you will, too.
